Roasted Tomato and Garlic Chutney


This simple 'Chutney' or 'Achaar' as we call it, is the prime accompaniment with momos, noodles and even with the typical Nepali Thali.
Variations can be made by adding ingredients like chopped fresh coriander, mint, crushed peanuts, chopped onions, etc etc..
Just add a handful of your favourite ingredient to the recipe below.






Ingredients:
1. Medium sized tomatoes  2 no
2. Chillies (green or red)   5 no
3. Garlic   2/3 cloves
4. Salt to taste

Method:

Dry roast the tomatoes over an open flame till it get slightly charred and the skin becomes peel-able (Is there such a word in the dictionary? I don't know). 
You could also blanch the tomatoes till the skin comes off. But if you blanch it then you will miss out on that distinct smokey charred flavour.
Peel off the skin from the tomatoes.
Put the tomatoes and all the other ingredients in your food processor. *You can add fresh coriander or mint leaves at this time*
Give it a blitz or two till it turns into a sauce consistency.
And thats it!

Enjoy it with a plate of steaming hot Momos. How to make momos? Well, that will be a recipe for another day ;))
