No Bake Blueberry Cheese Cake

This cheese cake is apt for a make-ahead dessert if you are expecting some special guests. Just pop it into your fridge and forget about it till its time to serve.
I have always preferred a no-bake cheese cake to a baked one. Maybe because its oh-so-easy to make!
No oven, no fuss, just throw in all the ingredients into the mixer and thats it!
I try to create a healthier version of any recipe as much as I possibly can. So instead of using cream cheese all the way I have used half cream cheese and half malai paneer. Feel free to use 100% cream cheese if you wish, its only going to taste even better!

I used canned blueberries this time. You can use the recipe below for any fruit flavour that takes your fancy.

Ingredients:

For the Base
1. Digestive Biscuits/Marie Biscuits  150g
2. Melted butter  3 Tbsp

For the Filling
1. Philadelphia Cream Cheese  250g
2. Malai Paneer      150g
3. Fresh Cream    200ml
4. Sugar 2 tbsp
5. Gelatin    1 1/2 Tbsp
6. Water   4-5 Tbsp
7. Blueberries (fresh or frozen) 40g

For the Topping
Blueberry preserve

Method:

Base
Crush the biscuits using a rolling pin.
Mix well with the butter (When you take a handful and close a tight fist, the mixture should hold the shape of the fist).
Press into the bottom of a 6" spring form cake tin to form a base.
Chill until firm (at least 20 mins).

Filling
Soak the gelatin in water for 5 minutes.
Warm it up till it turns into a clear liquid (do not boil).
Put the rest of the ingredients in your mixer and give it a blitz or two till it forms a smooth paste.
Add gelatin and mix well.
Pour into the prepared base and refrigerate until it sets (at least 3 hours).
Top it up with some fruit preserve or fresh fruits.

Remember to let it stand out of the fridge for sometime before serving to get the best of the flavours.

These can also be made into individual servings by preparing it in clear dessert glasses. They will look very Master-Chefy...lolz
Layers can be added like the one you see in the photo. Just divide the mixture into equal halves, add flavour in one and keep the other one without flavour. Pour the flavoured one into the base first followed by the plain one.

I hope you will try this one. Easy to make and the combination of berries with the cream cheese creates magic in the mouth, leaving your friends and family very impressed indeed!
